Ingredients for pastry:
3 and 1/2 glasses of plain flour
375 – 400g of real butter
3 – 5 tablespoons of sugar
6 egg yolks
1 teaspoon of baking powder
Ingredients for filling:
6 sweet apples
Cinnamon to taste
6 egg whites
15 tablespoons of sugar
Method:
Place the flour, butter, sugar, egg
yolks and baking powder into a
mixing bowl and knead until the
pastry has a consistency suitable
for rolling.
Divide your pastry into two halves.
Take one half and roll it so that is
big enough to cover a large pie dish
with deep sides. Place in the hot
oven (180 – 200’C) and cook for
about 20 min.
Place the other half of your pastry
into the freezer.
In the meantime prepare your
filling: peeled and grated apples
need to be slow cooked with cinnamon
in a saucepan for about 30 min.
Then whisk your egg whites with 15
desert spoons of sugar until stiff.
When your first half of pastry is
cooked place your cooked apples on
top of the pastry and cover with
whipped egg whites. Then take out
from the freezer the other half of
pastry and using a grater spread
over your pie.
Place in the hot oven for another 20
min. And it's done.
